Determination of dielectric properties of the red delicious apple and its correlation with quality parameters

Abstract

A hundred and forty red delicious apples were measured with an in-house open-ended coaxial probe and a Vector Network Analyzer (VNA) at frequencies from 10 MHz to 3 GHz in order to determine their dielectric properties and if there exist a correlation between the dielectric properties and apple quality parameters such as pH, color and soluble solids content (SSC). The correlation results between the dielectric properties and the quality parameters were high; especially for the SSC and pH parameter. For that reason, according to the data obtained, quality parameters can be predicted by the dielectric properties by mean of dielectric spectroscopy and multivariate analysis.
